Mangrove snapper is going to start to become a regular catch as winter season moves in, and if you plan to bring a few home you’re going to want to know how to cook them! A few recipes can turn this kind of fish into your new favorite kind of fish, and there is a way to cook up mangrove snapper to suit any sort of taste. Three fairly simple and really delicious ways to cook and serve mangrove snapper are:
- Pineapple Crusted – Mangrove snapper has a flavor that goes so well with pineapple, and this gives you a way to really give summer flavors a try in the late fall and early winter season. When served up with a handful of sweet potato fries, it’s really like bringing the flavors of two seasons together in one awesome meal. With the snapper, you’re going to want to coat the fish with one tablespoon of olive oil after the bones and skin have been removed, then season both sides of the filet with some Captain Rapps’ Marco Rico Seasoning or pinch of salt and pepper. Take lemon juice, vinegar and sugar and heat in a skillet over medium heat, only adding the fish when small bubbles start to appear. Once the fish is in the pan, add a bit of coconut milk, pineapples, peppers, and onions and cook for around 10 minutes.
Herb Crusted with Ratatouille – The snapper also goes really well with fresh French flavors, and this is an incredible way to serve mangrove snapper in a way that will really impress. First heat two tablespoons of vegetable oil in a saucepan over medium heat, then add in onions, bell peppers, and celery. Toss in a little salt and pepper, and cook the mixture for around three minutes. Next comes the eggplant with a little cayenne, and allow this to cook in for around five minutes. Once the five minutes is up, add in your zucchini, squash, garlic, basil and thyme and allow the mixture to simmer for around 8 to 10 minutes on reduced heat. Next, you’re going to want to season your mangrove snapper filets with salt and pepper, a little mustard, and your chosen herbs, then heat in a pan with olive oil on mediumfor around four minutes on each side.
- Breaded and Broiled – Mangrove snapper breaded and broiled is a simple recipe perfect for first time cooks, and the children are sure to love this one. Season the snapper filets with minced garlic and sea salt, pour white wine into a baking dish, add a little butter, and broil for around 10 minutes. Before serving, sprinkle a little panko breadcrumbs and parmesan cheese on the filets, put back under the broiler for around a minute, and you’re ready to serve!
